Banana-based chocolate muffins (no added sugar, low in gluten and vegan)
Recipe for about 6 large muffins or 8 small, per Tessa Holi
Essential info:

Ingredients :
- 130g of oat flour (or other)
- 4 tbsp. at s. cocoa powder
- 1 C. c. cinnamon
- 1 pinch of Himalayan salt
- 50g dark chocolate (more than 70% cocoa) according to your tastes
- 2 eggs (for 1 vegetable egg: 1 tbsp of chia seeds mixed with 3 tbsp of water)
- 120g coconut-based yogurt
- 2 tbsp. at s. melted coconut oil
- 3 ripe bananas (rather large)
- 1 ½ tsp. c. baking soda
- 1 C. c. cider vinegar
- 1 small handful of nuts or other (optional)
Preparation :
- Preheat the oven to 180°C
- Mix the dry ingredients (flour, Himalayan salt, cocoa and cinnamon) in a large bowl
- In another bowl, whisk the eggs
- Add the coconut yogurt and coconut oil and mix everything with a whisk
- In a plate, mash the three bananas with a fork
- Add the bananas to the wet ingredients
- Finely chop the nuts and chocolate and mix with the dry and wet ingredients in the large bowl
- Mix well
- In a small bowl, add the baking soda with the apple cider vinegar with a little water
- Add this mixture to the dough and mix again
- Grease the muffin pan and drop the batter evenly into the muffin forms
- Put in the oven for 30 minutes
